Ingredients
- 2 red onions
- 4 cloves of garlic, crushed
- 1/3 cup of balsamic vinegar
- 2 tbsp of Worcestershire sauce
- 1 cup of water
- 1 tbsp tomato puree
- 1/2 a jar of Gran Luchito Smoked Chilli Paste 100G (or less if you don’t want as much heat!)
- 2 cartons of tomato pasata
- 1 tsp of honey
- 2 sugar cubes
- 1 tbsp each of: paprika, cumin, Mexican oregano
- 1 tsp each of: onion granules, chilli powder, coriander, oregano
- 1/2 a pack of Capsicana Mexican Smoked Cumin + Chipotle Seasoning Mix
Method
- Dice onions and start to brown in some garlic/chilli oil. Add minced garlic after a few minutes of cooking and continue to cook on low for 10 minutes
- Add balsamic vinegar and Worcestershire sauce to deglaze the pan and simmer for a few minutes
- Add tomato puree, chilli puree, honey, herbs and spices – mix together
- Add tomatoe pasata and mix all ingredients together. Cover and simmer for 30-40 minutes until a dark, rich sauce is formed (add water if sauce is too thick)
- Portion up into containers and freeze if not using right away. It should make 5 x 200g portions and each portion will server 2 people
